  2. You need of Maida.
  3. Prepare of Ata or whole wheat flour.
  4. You need of besan.
  5. Prepare of Salt.

  10. You need of medium size potatoes boiled and coarsely mashed.

Papdi Chaat instructions

  1. In a cooker on 3 whistles boil the potatoes. Drain, peel and coarsely crush. Add red chilli powder and Aam chur powder and mix. Set aside.
  2. In a bowl add Maida, Ata, besan, salt, ghee and ajwain. Mix. With chilled water make a dough like Roti. Keep covered for 20 mins.
  3. Chop tomatoes and set aside. Make a Chutney of coriander, mint leaves, salt, onion, green chillies, oil and ice cubes. Set aside.
  4. Coarsely blend dalmuth and set aside.
  5. Mix the dough well and with a rolling pin make a Roti without using extra ata. With a circular mould make circles and set aside. Prick with fork.
  6. In a saucepan heat oil in low to medium flame. Fry the Papdi in batches.
  7. Now for plating put the mashed potatoes, chopped tomatoes, coriander-mint Chutney, Aamchur powder, yoghurt, and dalmuth coarsely crushed. Enjoy.
